Mulos de Pollo al Horno con Arroz Blanco / Baked Chicken Thighs w/ White Rice

Hey loves, happy Thursday.
Finally got myself in the kitchen today where I can actually share a post on my dish. I've been keeping things really quick and easy. Lots of salads with greens, a few Sushi nights and some wraps.

Thursday's treat!!!

I am making a baked dish my mom use to make that was juicy and filling. It was not as quick as I norm like to stick to, it's about an hour or so total but well worth the effort.

Ingredients :
-chicken thighs, skin off
-1 1/2 cup of rice
-oregano
-black pepper
-sazon Goya con azafran (gives reddish coloring)
-Goya Adobo (with or without pepper)
-olive oil
-salt

I think we all may know how to make our rice but for those who want to try my way. I use half a cup more of water to whatever measure for example today I am making just enough rice for 2 plus a little left over so I used 1 1/2 cups of rice and 2 cups of water. No one wants soupy rice or too dry a rice this measure insures perfect moisture every time.
Clean our rice, put water to boil, add salt to taste and a spoonful (I use big serving spoon) of olive oil.
Bring to boil add rice, when water is almost wasted lower flame, cover (I use aluminum foil on cover to seal moisture) and cook for 20 minutes, turn cook another 10 minutes and done.

My thighs! I removed the fat and washed off with a little of lemon juice in water. I rinsed and seasoned.
I didn't use specific measure this time because my mom doesn't ever measure so I used my taste buds to dictate amount of oregano, black pepper, adobo and sazon to use. My palate requested one whole packet of the red stuff lol.
I let it marinate for about 2 hours, I was home today so that was doable.


I turned on toaster oven, didn't want to bother with big oven and let it warm up some.
On the toaster try I put down a piece of aluminum foil to grab the access juice and easier clean up, place the 4 pieces of thighs evenly spaced, drizzled a little olive oil about cap full, placed in toaster oven and closed door.
Set it for an hour, checked in it twice, never turned.

These are the pic shares, turned out nice and juicy, a little crispy in some places, and cooked through and through!!! Yummy. Served with a salad on the side.

    1. Lol Tameka well if I was to cheat I would def try this because it truly was very moist. My daughter is very stern on how her chicken is to be cooked and she gave me two thumbs up on this one lol yippy :) thanks for visit :)
