Eggplant Parmesan Chips



Dolls as always I am about stress free, easy fixes and living, loving and laughing. I came home yesterday exhausted and hungry. I didn't want to make a big production out of dinner time after all it is just my daughter and I to feed at the moment. So I looked in the fridge and the pantry and decided to make Eggplant Parmesan Chips. I am calling them chips because I used the baby/small Eggplants and cut them into pop in your mouth chip like sizes.

I didn't really measure much I just eyeballed but from the pictures I think you will be able to make good judgment :)
I used 3 small eggplants
1 egg whisked and added seasoning of my liking (Goya Adobo)
1 and 1/2 cups of breadcrumbs plain or preseasoned depends on your mood :)
Pasta sauce again to your liking. I prefer to put a little in beginning then when done add some more.
Mozzarella cheese or any cheese that melts cut into small pieces that cover chip
1 cup Parmesan cheese added to breadcrumbs and if you like another 1/2 cup to sprinkle on top when done.

As the pictures will show you slice the eggplant nice chip like size, you dunk in egg then breadcrumbs coat nicely.
In skillet with some oil, enough to fry evenly place the chips for about 5/7 minutes depending on how quickly they begin to get some color. Make sure you flip to other side so cooks evenly.
Remove from oil, do not place on napkin to soak oil or you will remove the breadcrumbs but instead just shake off lightly, it will be fine.
Place the chips on an oven friendly bake tray spray or paper towel some olive oil or none stick PAM on tray so the chips won't stick. Add your sauce if you like and bake for about 20 minutes, remove add the mozzarella cheese and sprinkle the parm cheese if you like. Return to oven till cheese is melted.
Remove let cool and serve!!! My daughter served herself seconds said it was delicious and fun size to eat.

  1. We have only ever cooked eggplant one way. I have never done eggplant like this. It looks really tasty with the sauce and cheese. I will have to try this.

    1. Christin, hi welcome. Yes very yummy. I am picky with food and my daughter will let me know if she not to happy, she is 18 but still will say something to me like a 5 year old when it comes to food lol.

    1. Sweety, trust me when I tell you Eggplants were so far off my menu that I can't believe I eat it now, but I do. I love them and like I said you just have to find right recipe to make. I also like sauteed Squash which is something new I tried this year. Thanks for visit let me know if you do try Eggplants period lol.

  6. Well, I could never figure out what in the world to do with eggplants and you would think "I" of all people would know right...Caribbean girl! My mom used to make something of it but I do not think I ever learned it....and I never remember to ask her when I speak to her over the phone. But it was not chips though. I think I need to try out your recipe; looks easy and delicious!
